Coriander Leaves


This Week end i got a Fresh bunch of Coriander... i didn't waste anything in tat bunch except the root.... I separate the stem and leaves and cleaned properly.. I preserved  the stem for making Rasam ... Just add a Spoon of paste to your favorite Rasam or any type stocks... And the leaves are used to make the Chutney/ thovaiyal...(Mint-Coriander Chutney/ Mint-Coriander Thovaiyal) Click here for recipe..... 




Just clean the steams and grind in the mixer.. Store in airtight container and preserve in refrigerator..





Ladies-Finger Aviyal



Avial is a mixture of vegetables that blend with coconut, tamarind taste... Here i use Ladies finger and avial masala and avial preparation... Before doing this i told my mom about ladies- finger avial.. she is not in confident of Avial in ladies-finger.. finally i tried this.... she was wondering about this dish... yes it comes out well not it imagined... Best side dish for sambar sadham....

Mint- Coriander Chutney/ Mint- Coriander Thovaiyal


Coriander-Mint Chutney is a very tasty recipe which can be served with rice or south Indian recipes like Dosa or Idli. South Indian style of making Coriander-Mint chutney includes thoor dhal, urdu dhal, Tamarind, garlic for flavour, these all gives u a great taste that blend together. This Chutney can be Stored in an airtight container  in refrigerator for 10 days that does not lose it freshness...

Rasam Powder

Ingredients:
 Coriander seeds -1/2 cup
 Chana dal -
1/8 cup
 Red chilli powder -
3 tbsp
Pepper -
1 tbsp 

Method:
• Dry roast coriander seeds, chana dal, pepper till a nice aroma comes out.
• Switch off the heat and add chilli powder.
• Keep mixing taking care not to burn anything. Cool to room temperature and grind to a smooth powder.
• Store in an air tight container.

Coconut milk- Ice cubes

Coconut milk adds a light, delicate flavor to curries, soups and other dishes. Coconut milk does not last long – refrigerate and use within two days at most. But Coconut milk can be frozen. A handy trick that I also use with stock is to pour the milk into ice cube trays to freeze. One cube is the equivalent of about one ounce.

Working women will struggle in extracting coconut milk in busy morning..... Week end is the perfect time to make Coconut milk- ice cubes, masala for poriyal, theiyal, puli kulambu, here is the best idea to preserve the coconut milk, extracting coconut milk or leftover coconut milk from weekend one pot meal can be preserved and used in  fish curry, parupu curry, chicken curry, kuruma's.. coconut milk gives rich taste for your dish..

I usually Make this Coconut milk icecubes, and masala's in my week end.. even i'll boil some dhal for sambar & paruppu curry in week end and store it in my first rack of my refrigerator... Really this idea is handy in my busy morning....

Preserving is important... coconut milk cubes will be fresh for more than 2 weeks, should be store in zip-lock covers or air tight containers.... grinded masalas can be store in small containers.... keep in freezer..........

Orappam/Rice flour Halwa


Orappam Which is a traditional snack with lot of health benefits.. a filling snack, Orginal recipe will put dum in the last stage here we don't have the facility to put Charcol dum, so tried this as a Morden recipe.. Some called this as black halwa.. which is a famous in Nagercoil.. 
Orappam is a traditional snack of Kerala which is made on festive occasions . It is made like a halwa and then lightly baked to make it crusty and crunchy on the exterior. Inside it has a fudge like texture. It is made with rice flour and coconut milk, sugar/jaggery and a taste which will surely make you nostalgic. Since most home did not have ovens in earlier days it was baked by closing lid tightly and  burning coconut shells and placing it on top and bottom "Which Called as dhum" they keep this dhum for over night...
I heard this Delicious Halwa from my grand ma....  Usually this dish will made in marriage houses... They called it as "Orappam" means One appam that was sliced to pieces & Served to the guest.. Famous Traditional dish of kerala...

Sarkarai Pongal

Pongal is a Four-days- Long Harvest festival Celebrated in Tamil Nadu, a Southern State of India.
